Usually this means, storing bits of information so the site does not have to request it of you every time you
load a page.
Here are some examples of this on Locum Organiser.

Like most secure sites, when you log in to Locum Organiser, a "ticket" is stored in a cookie on your machine. The ticket doesn't contain your password or anything sensitive, but it allows the site to know you're logged in and when your login will time out.
Without this, every time you changed page, you'd have to log in again!

If you've been recommended by a colleague and you've come to the site via their
referral link. We'll store their referral ID in a cookie on your machine so that
if you choose to sign up, we can give them the credit they deserve.
- If you're a practice searching for locums, we'll store the search parameters you enter
(first part of your practice postcode, for example) in a cookie so you don't
have to enter it each time you need to find a locum. We reckon this saves time
as your practice doesn't move around that often!

Anonymously, tracking how users move through the site in order to improve the
design of the site.
We use Google Analytics, a popular web analytics service provided by Google, Inc. Google Analytics uses cookies to help us to analyse how users use the site.
It counts the number of visitors and tells us how people use the site - the relative popularity of different pages, for example.
The information generated by the cookie about your use of our website (including your IP address) will be transmitted to and stored by Google on servers in the United States.
Google will use this information for compiling reports on website activity and so forth.
Google undertakes not to associate your IP address with any other data held by Google.

This is how, for example, when you look at purchasing a lawnmower on site A, sites B, C, D suddenly start showing you gardening related ads.
